This deliciously spiced roasted cauliflower steak is the perfect summer meal!
Have you ever been so hungry that you blinked and the food was ready? 🌚That was me yesterday. I don’t think I’ve ever cooked that fast ever! So I’m going to do my best to recall what the hell I put on this cauliflower steak. Just know that all measurements were eyeballed 👀 but honestly those are the dishes that come out tasting the best. It was truly A1 ya’ll— I’m talking about heaven sent, baptized, washed in holy water 💦...I’m not even religious but it was just that good. Definitely worth trying. I served it with turmeric, ginger cilantro lime brown rice, sautéed mushrooms and zucchini and roasted Japanese sweet potatoes in chili powder and coconut oil. Those sweet potatoes tastes like butter, I swear. 😩 Oh by the way, the white sauce drizzled on top is cashew cheese aka vegan sour cream, check below for the recipe.
Roasted Cauliflower Steak Recipe • 1 cauliflower head • 1/2 cup curry masala paste (check below for the recipe) • 1-2 tbsp chili powder • 3 tsp liquid smoke • 3 tbsp gluten-free tamari • 2 tbsp dried thyme
• 1 tsp pink Himalayan salt
• 2 tbsp of coconut oil for the pan ____ For the Masala: 1 large onion 3-4 garlic cloves 4 tbsp fresh ginger 1/4-1/2 tsp Red chili pepper (depending on how hot you want it) 1 tbsp turmeric 1 tbsp cumin 3 tbsp Garam Masala 1 tsp ground cloves 1/4 tsp cayenne pepper 1 tsp pink Himalayan salt 1/4 cup soaked and peeled almonds 1 cup fresh cilantro ____ For the Cashew Cheese: 1 cup soaked cashews 1 tsp nutritional yeast 1/4 tsp salt 1 lemon squeezed 1/2 cup water Blend on high ____ Oil the pan, wash your cauliflower and slice it into big chunks. Add all of the slices to a large bowl and evenly apply all the dry seasonings. Then add your liquids: the tamari and liquid smoke. Finally, use a basing brush to apply the curry masala paste. Bake on 400 degrees for 30 minutes, flipping half way through.
