Crispy & Sweet Sesame Cauliflower Bites - 45 minutes

These cauliflower bites will give you the satisfaction you crave through their amazing flavor-profile. Whether you are a new or existing plant-based eater, you're gonna love this! And the best part is... no animals were harmed in the making of this dish. Isn't that just lovely? Let's get right to it..


What You'll Need:


For the Cauliflower Batter:

  • 1 head of organic cauliflower, (about 2 lbs) green stems removed washed and chopped into tree-like pieces

  • 1 cup chick pea (GF) or spelt flour (Not GF)

  • 1 ½ tsp chili powder

  • 1 paprika

  • 1 tsp garlic powder

  • 2 tsp liquid smoke

  • pink Himalayan salt and pepper to taste

  • 1 ½ cups water

For the Sweet Sesame Sauce:

  • 1.5 tbsp toasted sesame oil

  • ½ cup tamari + 1 tbsp tamari or coconut aminos

  • 2 tbsp rice wine vinegar

  • 2 tbsp maple or date syrup

  • 2 heaping tbsp tomato paste

  • 1 tbsp sriracha (add another if you like it spicy)

  • 2 tbsp white or black sesame seeds

  • 2 cloves organic garlic peeled and crushed in a garlic press

  • 3-inch piece organic ginger washed and grated


Instructions:


1. Preheat the oven to 450 degrees Fahrenheit or 425 degrees Fahrenheit if your oven tends to cook quickly. Line 1 baking sheet with parchment paper and put to the side.


2. Wash your cauliflower and cut them it into medium to small florets. In a large bowl, mix together your dry batter ingredients: chick pea or spelt flour, chili powder, paprika, garlic powder, liquid smoke, sesame seeds, salt and pepper. Lastly, add the water gradually until you create a thick but slightly runny paste. You may need more or less water than what is noted on the recipe so this is why it's important to add the water gradually. It helps you to gauge when you have added enough water.


3. Add the freshly washed and chopped cauliflower florets into the large bowl of batter and use a spoon and/or tongs to make sure each piece is coated well. Place each caulilower floret unto your baking sheet carefully, ensuring to leave room in between each piece. Bake in the oven for 15-20 minutes or until the batter looks slightly crisp.


4. While, the cauliflower is baking, make the sweet sesame sauce. In a small pot, add your sauce ingredients and bring to a boil: toasted sesame oil, tamari or coconut aminos, rice wine vinegar, maple syrup or date syrup, tomato paste, sriracha, sesame seeds, fresh garlic and fresh ginger. After it comes to a boil, simmer for 5-10 minutes or until thickened. Taste to check if it has your desired combination of the sweet and sour taste.


5. Take the cauliflower out of the oven and let cool for 5-10 minutes. Brush the sweet sesame sauce liberally over it and place the cauliflower back into the oven to bake for another 20 minutes or until crispy, stopping halfway to brush the florets with more sweet sesame sauce.


6. Remove from the oven and serve topped with fresh green scallions as an appetizer or as a protein addition to your meal.
