Mung Bean Coconut Asparagus Soup - 45 minutes

Mung beans are one of the best plant-based sources of protein. They are rich in essential amino acids such as histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine. Essential amino acids are the ones our bodies aren’t able to produce naturally so it’s imperative that we get these nutrients from the foods we eat.
Additionally, these beans are rich in antioxidants, magnesium, potassium, iron, fiber, and folate which are all nutrients that help our bodies to function optimally.
Make sure your soak your mung beans before cooking them because that reduces the amount of phytic acid inside of the beans which would inhibit nutrient absorption if not soaked.
