Red Lentil Pumpkin Patties - Vata Recipe

Red lentils are not only great due to their easy-to-digest profile, but they also possess a great amount of health benefits as well! Red lentils naturally contain vital nutrients such as plant-sourced iron and protein, essential vitamin Bs, folate, zinc, phosphorous, manganese, fiber, copper, and potassium. It's easy to digest and takes less time to prepare than other lentils or Dahls.


It's great for those with a Vata constitution or people experiencing weak digestion. Just be sure to soak them overnight and rinse them thoroughly to get rid of the anti-nutrients which in this case are lectins and phytic acid. If you do not soak your lentils you're allowing the natural properties of the legume to interfere with the digestion process and the absorption of nutrients which I'm sure you don't want.


These patties are the perfect appetizer, meat replacement or just a straight-up delicious side dish to any plant-based meal. Have them with a home-made plant-based sauce or just a natural (no sugar added) ketchup. They're made with mostly whole food ingredients and of course they are packed with flavor.
